Anda Bhurji or Egg Bhurji is an Indian version of Scrambled Eggs. Anda is egg in Hindi and Bhurji is scrambled. It is a popular Indian street food and a perfect breakfast, lunch and dinner recipe. Very easy to make and the best part – it requires very basic ingredients, one skillet and 20 minutes and your Anda Bhurji is ready.

If you’ve ever lived in Mumbai or Pune and you had your midnight cravings. All that you have to do is, go to one of the street carts/ haath gadi that make that buttery egg bhurji and pav bhaji in the middle of the night, and you are sorted. Nothing beats that humble, hot, buttery, spicy and full of flavour Anda Bhurji.
My Mama ( Mother’s Brother) makes the best Anda Bhurji and this is the way he makes it. This was his favorite tiffin recipe which he used to pair with chapatis. And whenever he used to come home he would always make this for me. Although I like buttery, spicy stuff, the one that my Mama makes will always remain my favorite.
Some tips to make Anda Bhurji:
- You can skip green chillies completely and use red chilli powder instead.
- If you are unsure of adding the eggs directly to the pan, you can crack the eggs in a large bowl, whisk until smooth and add it to the onion tomato mixture.
- Always add the cilantro at the end to preserve the fresh flavor and bright green color.
- To make it street style, you can use a little bit of Pav Bhaji Masala. Recommend using Everest Pav Bhaji Masala.
- You can use butter to make Anda Bhurji instead of Oil. Using Amul butter is highly highly recommended.
NOT AN EGG LOVER?
Replace eggs with Paneer and make Paneer Bhurji by replacing the eggs with 2 cups crumbled paneer (Indian cottage cheese). Follow the same procedure and just use paneer instead of eggs.
Bhurji Pav is an ultimate combination which combines the best of spicy bhurji with pav. Anda Bhurji can be eaten with pav, toasts, naan, paratha or as a filling for pita or can be used to make a wrap with tortilla. You can also use it to make a filling for Sandwiches. Ingredients
Eggs – 4
Oil – 2 tablespoon
Onion – 1 large
Tomato- 1
Green Chillies- 3-4 (depending on your spice level)
Cumin seeds – 1 teaspoon
Turmeric Powder- 1/2 teaspoon
Coriander powder- 1 teaspoon
Salt – to taste
Cilantro to garnish
Directions
- Heat a pan over medium heat and once it’s hot, add oil and cumin seeds. Saute for about 30 seconds until the cumin seeds change color.
- Add chopped onion and green chili . Saute onions for about 3-5 minutes until they become translucent.
- Add chopped tomatoes, spices and mix well. Cook the tomatoes until they soften, for about 2-3 minutes.
- Break the eggs directly into the pan and cook for 1-2 minutes, scrambling the eggs until cooked. Keep stirring continuously, breaking up the bigger lumps. Cook the eggs until well done and no longer runny. Switch off the flame.
- Garnish with cilantro and serve with pav, roti or paratha.
