Bhakri is a staple in many Maharashtrian household. Bhakri is a round flat unleavened Indian bread that’s healthy and nutritious too.A perfect pairing with any curries, both veg and non veg, green leafy vegetables, or with hirvi mirchi cha thecha or lasun chutney (garlic chutney), dry fish, pitala and even with a dollop of ghee and jaggery. Or the way I love it sometimes just with milk like a toddler.? But the combinations are endless.

The Traditional Method:

Bhakris can be made with a combination of flours and is coarse than a whole wheat chapati. Traditionally it is made with a dough which is flattened using palms. It is made thin by holding the ball in both palms which requires a lot of skill. The pan is heated and the bhakri is cooked applying little water to the upper surface. The other side also cooked on the tava /griddle. Once it is prepared, it is roasted in the direct flame on both the sides.

Bhakri had been my nemesis for a very long time. Personally, I love Bhakaris whether they are made of jowar, bajara, or even rice flour. And I was really bad like really really bad in making those. I could not make it even if my survival depended on it. I made bhakaris of various shapes and sizes, but one thing was consistent that was all were hard as a rock.

Everything changed, when I came across this method of making a ukad (boiled flour) and then rolling it to make the bhakari. Now they are staple in our home too. The bhakaris I make are soft and thin, just the way we like it. All you need is a good ukad. This is a full proof method and I am sure you will love it too.

Bhakri is a round flat unleavened Indian bread that’s healthy and nutritious too.

Ingredients

  • 1 cup Bajara flour/ pearl millet flour

  • 1 cup Water

  • 1 teaspooon salt

  • 1 tablespoon Oil

  • Ghee as required.

Directions

  • In a pot, add water and salt and let it come to a boil on a high flame.
  • Reduce the flame to low and add the bajara flour(pearl millet flour) and cook stirring continuously till the flour turns into a lump. It may take hardly 2 minutes.
  • Switch off the flame and keep covered till the dough become warm. It takes around 7- 8 minutes.
  • When the dough is warm, transfer it on a rolling board and knead it for 7-8 minutes to make it smooth. Use your palm to knead the dough. Knead it well. If you are unable to knead the dough, since the dough is still hot, then dip your hand in room temperature water and start kneading it until it is smooth.
  • Then divide the dough into 7 equal portions and roll it to round balls. Cover the remaining with a damp cloth. Then roll the balls in bajari flour and place it on a rolling board.Roll it to a round roti with a rolling pin. Dust the rolling board with flour if required.
  • Heat a griddle on high flame and place the bhakri on it.
    Then flip it and cook till light brown spot appears from both sides.
  • Now take the griddle off the heat and lift the bhakri with the help of tongs and roast it directly on the open flame for a few seconds on both the sides. This is an optional step.
  • Serve hot with a dollop of ghee.

Notes

  • You can substitute any flour and follow the same procedure. I have successfully made bhakaris with rice flour, sorghum flour too ;and it has always yielded good results.
  • The ratio of water : flour is always 1:1. So this recipe can easily be doubled, tripled or even halved.
  • When you are rolling out the bhakri, remember to cover the remaining dough with a damp cloth so that the dough does not dry out.
  • One cup of flour makes around 7 medium sized bhakris.
  • The bhakris should be prepared immediately after kneading the dough. If kept aside for long the dough will crack while rolling.

SUGGESTED SERVINGS:

Serve Bhakari with your lunch, dinner (any vegetarian, non- vegetarian or even fish ) with any type of vegetable or curry or even type of chutney. Or with milk and a bit of sugar. Endless possibilities.
