Munching on Boiled Peanuts aka Ukadlelya Shenga in Marathi is a trip down the memory lane. Reminds me of the vacations and the train journey to my grandma’s home. Mom would often buy these salty and delicious boiled peanuts (ukadlelya shenga) for my brother and me. In fact, this was one of the main attraction of the 3 hour train ride for us. The next being Vada Pav at the next station of course. Peeling the peanut shells off, eating the soft and salty nut inside and slurping the salty water dribbles.. Oh what a fun ride it would be. But trust me, these are totally addictive.

This is a very simple and easy recipe. Vegan and gluten- free. And requires just the basic ingredients that you have in your pantry. Just add all the ingredients into the pot and boil it. I have just used salt in this recipe as I wanted to keep it classic and basic. But you can use any kind of seasoning that you like. You can use chillies, cajun seasoning, red chilli powder and many more variations.
WHAT IS THE DIFFERENCE BETWEEN GREEN PEANUT AND RAW PEANUTS?
A green peanut is a term to used to describe freshly harvested peanuts. These contain higher water content (35%-50%) and are easily perishable.
Raw peanuts are air dried/dehydrated to reduce their moisture content in order to make them last longer. Therefore, you have to pre- soak the peanuts overnight in water to rehydrate them.
POINTS TO REMEMBER:
- Clean the peanuts thoroughly under running tap water to remove all the dirt.
- When buying the raw nuts, try to get very fresh ones with moist shells. Those with drier shells may not completely cook to a tender consistency.
- Cooking time can vary depending on how old the peanuts are.

Ingredients
1 lb. raw peanuts in shell
¼ cup salt ( I used sea salt)
1 tablespoon Turmeric powder
enough water to cover about one inch above the peanut level
Directions
- Clean the peanuts of any visible dirt, debris. Discard the rotten/ blackened ones. Add plenty of water and wash them to remove any dirt. Repeat this step couple of times to remove all the dirt.
- INSTANT POT METHOD:
- Put the washed peanuts into the inner pot of your instant pot and add sea salt , turmeric powder and water. Make sure the water is one inch above the peanut level.
- Give a mix and close the lid. Adjust the valve to the sealing position and press manual or pressure cooker mode. Adjust the time to 45 minutes.
- Once the cooking time is up, wait for natural pressure release before opening the lid.
- The cooking time may vary depending on the quality of the peanuts used.
- STOVE TOP METHOD:
- Add the washed peanuts, salt , turmeric powder and water to a large pot. Bring it to a boil, reduce the heat to medium and cook for 2 hours until the desired level of softness.
- Make sure there is plenty of water while cooking.

- Cooking time can vary depending on how old the peanuts are. So if the peanuts arenāt cooked through in the time indicated, donāt worry, just cook them a little longer.
