Chicken Malvani  is a spicy and flavourful chicken recipe from Malvan. Malvan is a western coastal region of Maharashtra. Apart from the scenic spots, this region is quite popular for its diverse food culture and gastronomy. Authentic Chicken Malvani is made with aromatic homemade Malvani masala and uses coconut and onion as a base. Due to the abundance of coconut in the region, coconut is used in majority of the Malvani preparations.

Making the gravy right from scratch can be intimidating and time consuming if you are not used to making it. There are days when I crave for my mom’s food and to make curry/ gravy after a long day at work can be labor intensive. And the resultant gravy is rich, spicy, aromatic and flavourful that will keep wanting you for more. And trust me this will definitely take you back to your Mom’s kitchen and so he has rightly named it- Aai’s Malvani Gravy.
