The ultimate summer treat is here- Ice cream. Ice cream sandwiches combines two of my favorite food- ice cream and cookies. These Ice Cream Sandwiches are perfect on a hot summer day or honestly they are perfect for any time. My version of Ice cream Sandwiches are the lazy version which features the OG Biscuit of India- Parle G (G mane-(means) Genius) and ice cream.

What is Parle-G?

For all my non-Indian friends, if you’ve never tried Parle-G, you’re certainly missing out! They’re the oldest brand name in India (since 1939) and one of the best-selling brands of biscuits in the world. They are small, rectangular flat-baked biscuits filled with the goodness of milk and wheat. Parle-G biscuits are usually eaten as a tea-time snack dunked in chai. However, I also enjoy these biscuits dipped in water. Yes you read that right!! Absolutely love this combo.

You can easily get these biscuits at any Indian Store, and even Real Canadian Superstore and Walmart has them in the International Aisle.

My lazy version is grabbing the biscuits from the pantry because we Indians always have their Parle G stash and pulling that ice cream (another essential item in our home) from the freezer and slapping them together to make an epic dessert. Now before you guys come at me.. yes everything is store brought, I did mention it – my lazy version.

But you guys are free to make your own cookies and your pint of ice cream. The choice is yours and I did choose the easiest and fastest method. Also you can use any cookie or biscuit you want to use.

What can you use more in your Ice cream Sandwiches

  • You can add sprinkles, Choco-chips, add nuts of your choice. Honestly the possibilities are endless.
  • Rolling the sandwiches in mini chocolate chips or sprinkles or nuts adds texture, plus it helps seal in the ice cream.
  • You can keep it classic the way I have kept it or you can dip them in melted chocolate and freeze them. Make sure the melted chocolate is at room temperature before you dip your ice cream sandwiches.

Some tips to keep in mind while making the sandwiches:

  • Make sure to freeze the assembled sandwiches for at least 3 hours prior to serving.
  • Make one sandwich at a time and place in the freezer as soon as it’s assembled. Your freezer is your best friend while making these ice cream sandwiches. Don’t assemble the entire batch and then freeze because the first few will be melting by the time you’re done. Keep freezing them at all stages while assembling them.
  • Once assembled, tightly wrap each sandwich individually in plastic wrap or parchment paper to hold the assembled sandwich together.
  • Freeze for a minimum of 3 hours and up to 3 months. After 3 hours, the ice cream is still a bit soft but the sandwiches are frozen enough to easily pick up and enjoy. These are a great make ahead treat for parties and summer days.

Make these perfect summer treats with Indian OG biscuits- Parle G and your favorite Ice cream.

Ingredients

  • 12 Parle G Biscuits

  • 1 1/2 cups vanilla ice cream or any ice- cream of your choice

  • 1/2 cup Chocolate chips

  • Sprinkles/ nuts of your choice- optional

Directions

  • Scoop ice cream onto one of the biscuits, then top with the remaining cookies to make a sandwich. Freeze the sandwiches when necessary. Freeze them for mins before serving.
  • To make the chocolate version, working quickly, dip each of the sandwiches in the sprinkles to coat the ice cream with melted chocolate.
  • Freeze for 30 minutes before enjoying. Store in an airtight container in the freezer.

Notes

    These fun and addictive ice cream sandwiches are so easy to make, and have only three ingredients! They’re the perfect sweet treat to enjoy this summer!
